Our Story

The story of Chef Nobu is one of dedication, perseverance, and a genuine love of what you do. It goes to show that whilst success doesn’t always happen over-night, with the right will and ambition it will happen.

From humble beginnings in Saitama Japan, Chef Nobu’s career has flourished internationally over the years. Moving to Tokyo at 17, Nobu started his journey at a respected restaurant in Tokyo called Matsuei where he completed a 7 year apprenticeship.

From there he was influenced by his work and travels in Peru; the place where so many of the famed Nobu dishes were created. After a tragic fire destroyed his first restaurant in Alaska (the birth place of Black Cod Miso), down but not disheartened, Nobu moved to Los Angeles where his first fully owned restaurant Matsuhisa opened its doors. From this point on, success was inevitable thanks to rave reviews and guests such as the likes of Robert De Niro. Fast track to 1994, Nobu Restaurant was established in New York and the brand grew from strength to strength. The first Nobu Hotel opened in 2013 in Las Vegas with great success and now Nobu Hotels is seeing fantastic expansion all over the world. Nobu Hotel London Portman Square is the second hotel in London to open, situated within the busy and vibrant area of Marylebone, Central London.
